Week 1 Menu

Here are the recipes that I made during Week 1 that are worth sharing:

Slow Cooker Vegan Saag Paneer

I love that this recipe uses tofu instead of cheese. This recipe also provided me with the opportunity to use my food processor and Crock Pot for the first time. It turned out amazing, honestly it was almost better than what I’ve had in a restaurant.

Lemony Lentil Soup

The corn threw me off a bit in this recipe, but it truly made a huge difference. I’ve made lentil soup once before, and it didn’t turn out nearly as good as this one did. My fiance said that it was just as good as what he’s had in a restaurant.

Vegan Buddha Bowl

This bowl was good. Pretty basic. Because it was my first week at this, I wanted to go off of some recipes that were already out there.

Sweet Potato Chickpea Buddha Bowl

I loved this one. The chickpeas were really the standout on this one. My fiance was meh about it. Trying to get him to love kale.

Veggie Sushi Bowls

This was our favorite bowl of the week. I used fresh edamame instead of frozen, skipped the carrots, and added kimchi. I also lined the bowl with seaweed snack sheets, then put the rice over it. The spicy mayo sauce was a keeper, too!
